Breakfast


1. Banana Walnut Protein Pancakes

Ingredients:

  • 1 ripe banana

  • 2 eggs

  • ½ cup rolled oats

  • 1 scoop vanilla protein powder

  • 1 tsp baking powder

  • ½ tsp cinnamon

  • Chopped walnuts for topping

Instructions:

  1. Blend banana, eggs, oats, protein powder, baking powder, and cinnamon until smooth.

  2. Cook on a lightly greased skillet over medium heat.

  3. Flip when bubbles form.

  4. Top with chopped walnuts and fresh berries if desired.


2. Caprese Egg Toast

Ingredients:

  • 2 slices whole-grain bread

  • 2 eggs

  • Fresh mozzarella slices

  • Tomato slices

  • Fresh basil

  • Balsamic glaze (optional)

Instructions:

  1. Toast the bread.

  2. Fry or poach the eggs.

  3. Layer mozzarella, tomato, and egg on toast.

  4. Garnish with basil and a light drizzle of balsamic glaze.


Lunch


1. Steak & Roasted Veggie Grain Bowl

Ingredients:

  • 5–6 oz grilled sirloin steak, sliced

  • ½ cup cooked farro

  • Roasted zucchini

  • Roasted bell peppers

  • Baby spinach

  • Olive oil

  • Lemon juice

Instructions:

  1. Roast vegetables at 400°F until tender.

  2. Add farro and spinach to a bowl.

  3. Top with vegetables and sliced steak.

  4. Drizzle with olive oil and lemon juice.


2. Buffalo Chicken Stuffed Avocados

Ingredients:

  • 2 avocados, halved

  • 1½ cups shredded cooked chicken

  • 2 tbsp plain Greek yogurt

  • 1 tbsp buffalo sauce

  • Diced celery

  • Green onions

Instructions:

  1. Mix chicken, Greek yogurt, buffalo sauce, celery, and green onions.

  2. Spoon the mixture into avocado halves.

  3. Serve with fresh fruit or mixed greens.


Dinner


1. Pesto Chicken with Roasted Cherry Tomatoes & Green Beans

Ingredients:

  • 2 chicken breasts

  • 2 tbsp basil pesto

  • 2 cups green beans

  • 1 cup cherry tomatoes

  • 1 tbsp olive oil

  • Salt & pepper

Instructions:

  1. Preheat oven to 400°F.

  2. Spread pesto over the chicken breasts.

  3. Toss vegetables with olive oil, salt, and pepper.

  4. Arrange everything on a sheet pan.

  5. Roast for 25–30 minutes until the chicken reaches 165°F.


2. Moroccan Turkey Meatballs with Herbed Couscous

Ingredients:

  • 1 lb lean ground turkey

  • 1 egg

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp cinnamon

  • 1 clove garlic, minced

  • 1 cup whole-wheat couscous

  • Fresh parsley

  • Olive oil

Instructions:

  1. Combine turkey, egg, garlic, and spices.

  2. Form into meatballs and bake at 400°F for 18–20 minutes.

  3. Prepare couscous according to package directions.

  4. Stir chopped parsley into the couscous.
