Breakfast


1. Blackberry Vanilla Chia Bowl

Ingredients:

  • 1 cup plain Greek yogurt

  • ½ cup blackberries

  • 1 tbsp chia seeds

  • 2 tbsp chopped pistachios

  • 1 tsp vanilla extract

  • Drizzle of honey (optional)

Instructions:

  1. Add Greek yogurt to a bowl.

  2. Stir in vanilla extract.

  3. Top with blackberries, chia seeds, and pistachios.

  4. Finish with a light drizzle of honey if desired.


2. Roasted Veggie Breakfast Burrito

Ingredients:

  • 2 eggs

  • ½ cup roasted sweet potato cubes

  • ¼ cup diced red bell pepper

  • 2 tbsp shredded pepper jack cheese

  • 1 whole wheat tortilla

  • Salsa (optional)

Instructions:

  1. Scramble the eggs.

  2. Warm the tortilla.

  3. Fill with eggs, sweet potatoes, peppers, and cheese.

  4. Roll tightly and serve with salsa.


Lunch


1. Lemon Dill Salmon Grain Bowl

Ingredients:

  • 1 baked salmon fillet

  • ½ cup cooked barley

  • Baby spinach

  • Sliced cucumber

  • Cherry tomatoes

  • Juice of ½ lemon

  • 1 tbsp olive oil

  • Fresh dill (optional)

Instructions:

  1. Add barley and spinach to a bowl.

  2. Top with salmon, cucumber, and tomatoes.

  3. Drizzle with olive oil and lemon juice.

  4. Garnish with fresh dill.


2. White Bean Chicken Skillet

Ingredients:

  • 1 grilled chicken breast, diced

  • 1 can cannellini beans, drained

  • 2 cups baby spinach

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • ¼ cup chicken broth

  • Italian seasoning

Instructions:

  1. Heat olive oil in a skillet.

  2. Cook garlic for 30 seconds.

  3. Add chicken, beans, broth, and seasoning.

  4. Stir in spinach until wilted.

  5. Serve warm.


Dinner


1. Mediterranean Stuffed Zucchini Boats

Ingredients:

  • 2 large zucchini

  • 1 lb lean ground turkey

  • ½ cup diced tomatoes

  • ¼ cup crumbled feta

  • 2 tbsp chopped parsley

  • 1 tsp oregano

  • Olive oil

Instructions:

  1. Preheat oven to 400°F.

  2. Slice zucchini lengthwise and scoop out the center.

  3. Brown the turkey with oregano.

  4. Mix in diced tomatoes.

  5. Fill zucchini boats with the mixture.

  6. Top with feta and bake for 20–25 minutes.

  7. Garnish with parsley.


2. Ginger Lime Cod with Sesame Snap Peas

Ingredients:

  • 2 cod fillets

  • 2 cups snap peas

  • 1 tbsp sesame oil

  • Juice of 1 lime

  • 1 tsp grated fresh ginger

  • 1 tbsp low-sodium soy sauce

  • Sesame seeds (optional)

Instructions:

  1. Bake cod at 400°F for 12–15 minutes.

  2. Sauté snap peas in sesame oil for 3–4 minutes.

  3. Stir in ginger, soy sauce, and lime juice.

  4. Serve cod alongside the snap peas.

  5. Sprinkle with sesame seeds if desired.
