Breakfast


1. Maple Peach Cottage Cheese Bowl

Ingredients:

  • 1 cup cottage cheese

  • 1 fresh peach, sliced

  • 1 tbsp chopped pecans

  • 1 tsp pure maple syrup

  • Cinnamon

Instructions:

  1. Add cottage cheese to a bowl.

  2. Top with sliced peaches and pecans.

  3. Drizzle lightly with maple syrup.

  4. Finish with a sprinkle of cinnamon.


2. Southwest Egg & Black Bean Bowl

Ingredients:

  • 2 eggs

  • ½ cup black beans, rinsed

  • ½ avocado, diced

  • ¼ cup fresh salsa

  • Handful of spinach

  • Salt & pepper

Instructions:

  1. Sauté spinach in a skillet until slightly wilted.

  2. Add eggs and scramble until cooked.

  3. Add eggs and spinach to a bowl with black beans.

  4. Top with avocado and fresh salsa.


Lunch


1. Garlic Lime Shrimp & Avocado Bowl

Ingredients:

  • 5–6 oz shrimp, peeled and deveined

  • ½–1 cup cooked brown rice

  • ½ avocado, sliced

  • ½ cup diced cucumber

  • Juice of ½ lime

  • 1 clove garlic, minced

  • Olive oil

  • Salt & pepper

Instructions:

  1. Heat a small amount of olive oil in a skillet.

  2. Add garlic and shrimp and cook until shrimp are pink.

  3. Build a bowl with rice, cucumber, and avocado.

  4. Add shrimp and squeeze fresh lime juice over the top.


2. Loaded Chicken & Broccoli Sweet Potato

Ingredients:

  • 1 large sweet potato

  • 1 cup cooked shredded chicken

  • ½ cup broccoli, chopped

  • 2 tbsp plain Greek yogurt

  • ¼ cup shredded cheddar cheese

  • Salt & pepper

Instructions:

  1. Bake or microwave sweet potato until tender.

  2. Steam broccoli until tender-crisp.

  3. Slice open the sweet potato and add chicken and broccoli.

  4. Top with Greek yogurt and a small amount of cheddar.


Dinner


1. Greek Turkey Burgers & Roasted Potatoes

Ingredients:

  • 1 lb lean ground turkey

  • ¼ cup crumbled feta

  • 1 tsp dried oregano

  • 1 clove garlic, minced

  • 1 lb baby potatoes, halved

  • Olive oil

  • Salt & pepper

Instructions:

  1. Preheat oven to 425°F.

  2. Toss potatoes with olive oil, salt, and pepper and roast for 25–30 minutes.

  3. Mix turkey with feta, oregano, and garlic.

  4. Form into patties.

  5. Cook burgers in a skillet or on the grill until the center reaches 165°F.

  6. Serve with roasted potatoes and vegetables or greens.


2. One-Pan Balsamic Chicken & Vegetables

Ingredients:

  • 2–3 chicken breasts

  • 1 zucchini, chopped

  • 1 bell pepper, chopped

  • 1 red onion, chopped

  • 1 cup cherry tomatoes

  • 2 tbsp balsamic vinegar

  • 1 tbsp olive oil

  • 1 tsp Italian seasoning

  • Salt & pepper

Instructions:

  1. Preheat oven to 400°F.

  2. Place chicken and vegetables on a sheet pan.

  3. Drizzle with olive oil and balsamic vinegar.

  4. Season with Italian seasoning, salt, and pepper.

  5. Bake for 25–30 minutes until chicken reaches 165°F and vegetables are tender.
